Extra Virgin Standards

We follow International Olive Council guidelines on acidity and taste to make sure our oil earns the name "extra virgin."

The Pressing Process

Follow the journey from grove to bottle, where quick handling and gentle pressing preserve the character of the Nabali olive.

First Cold Press

Pressed at low temperature, without heat or added chemicals, to protect the oil's natural flavor and nutrients — just mechanical extraction, the traditional way.

schedule

The 24-Hour Rule

Olives are carried from the grove to the press within 24 hours of picking. Moving quickly like this is one of the simplest ways we prevent oxidation and keep acidity low.

Decantation & Settling

Natural gravity settling in stainless steel tanks lets impurities fall away without filtering, keeping the oil's full-bodied character intact.

Our Quality Practices

Simple, Honest Quality Control

We're a small cooperative, not an industrial lab — so we keep quality control straightforward: fast harvest-to-press timing, careful storage, and a working relationship with a regional laboratory that helps us check each season's oil against recognized extra virgin standards.

opacity Acidity Testing
expand_more
Each season, we send oil samples to a regional agricultural laboratory to test acidity levels, helping us confirm our oil qualifies as extra virgin.
psychology Taste & Aroma Check
expand_more
Before bottling, cooperative members taste-test each batch themselves, checking for the fresh, fruity flavor and clean finish of a good extra virgin oil.
biotech Freshness & Purity Check
expand_more
We check every batch for clarity, color, and aroma, watching for any sign of rancidity or off-flavors before it is ever bottled.
